He works about 1/2 stick of butter up under the skin with your hand (also some Salt and Pepper on the outside)...

Put the bird on the Smoker for about 2 hours on low heat... (150-175 degrees) - just to get the smoke flavor on...

Stand the bird on it's neck - put 1/2 jar Honey and 1 stick of Butter in the chest cavity.

Then put the bird in the cooker (or pan) on it's belly (wrong side up - so the Honey and Butter work DOWN into the breast area) until desired internal temp (165??) is reached (4-6 hours depending on the size of the bird).

P.S. he might also add some Apple Juice to the bottom of the Cooker/Pan - will help keep it moist.
