1 quart low-sodium chicken broth
2 cups 2% milk
1 pkg (20 ounces) frozen broccoli cuts - thawed
1 small onion - less than 2" across- finely chopped
1/4 teaspoon blacK pepper
7 ounces velveeta cut into small blocks
1 1/2 cups instant mashed potatoes (not mixed)
1 cup water
1. Combine broth, water, milk, broccoli, onion,and pepper in slow cooker. Cover and cook on high for three hours....
(you can halt the soup here until ready to serve)
2. Whisk velveeta into slow cooker until smooth....sprinkle instant potatoes in...whisk to smooth.
Serve hot with a good garlic toast.
